This simple oven-roasted potatoes recipe can be easily modified by changing out the herbs to create a flavor profile that matches the rest of your meal. For instance, you can change out the rosemary and thyme for parsley and oregano. You can even add in some minced garlic for some extra flavor and health.
Dried herbs also work well with this recipe, if your favorite fresh herbs are out of season. For another variation, use sweet potatoes instead. This recipe really is very versatile and you can easily adapt to make it your own!
- 1.5 lbs red or yellow skinned potatoes, washed
- 2 tablespoons extra virgin olive oil
- 1 tablespoon fresh rosemary
- 1 tablespoon fresh thyme
- Pink Himalayan Salt to taste
- Preheat oven to 425 degrees.
- Cut potatoes into evenly sized wedges or cubes about 1”
- Toss potatoes, olive oil, herbs, and salt in a bowl
- Place on a baking sheet lined with parchment paper
- Bake for 30-35 minutes until browned and tender
