Oven Roasted Potatoes With Herbs (Vegan)

Ingredients

  • pounds organic red OR yellow-skinned potatoes , washed
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon fresh rosemary OR 1 teaspoon dried
  • 1 tablespoon fresh thyme OR 1 teaspoon dried
  • ¼ teaspoon pink Himalayan salt OR sea salt, ground

Instructions

  • Preheat the oven to 425°F. Cut potatoes into 1-inch cubes.
  • Place the potatoes, olive oil, herbs, and sea salt in a large bowl. Toss until potatoes are completely covered with oil. Place the potatoes in a single layer on a baking sheet lined with parchment paper. Bake for 30-35 minutes or until browned and tender.
