Nearly half of the recommended daily amount of magnesium, which participates in a wide range of vitally important physiological functions, including the creation of ATP (adenosine triphosphate, the energy molecules of your body), the synthesis of RNA and DNA, the pumping of your heart, proper bone and tooth formation, relaxation of your blood vessels, and proper bowel function.
Talk about a super food!
Best Way to Eat Pumpkin Seeds
To get the most out of the power-packed nutrition in pumpkin seeds, make sure to eat them raw. You can:
-
- Sprinkle them on salads.
- Include 1/8 – 1/4 cup in your super green breakfast smoothie.
- Mix them with some raw nuts and dried fruit for a healthy trail mix.
- Or, my favorite, make raw pumpkin seed butter!
Like anything out there, not all pumpkin seed butter recipes are created equal, which is why I highly recommend trying out this one by my very talented little-sister-in-Christ, Kelcie Morgan.
