Healthy Dessert Ingredients 101
The secret to creating delicious gluten-free treats is the right combination of ingredients! Here’s what you need to add to your shopping list.
Sweetener: Our recipes avoid white sugar in favor of lower-glycemic options. After experimenting with multiple natural sweeteners, I found organic coconut sugar is the best option. This lovely sweetener has a deep dark taste, similar to brown sugar.

Butter: This ingredient creates a decadent blueberry buckle. Diet culture has eschewed butter in years past. Many thought that margarine was the answer, but studies show this theory is false. (6). When purchasing butter, look for organic, grass-fed varieties.
If you’re following a dairy-free diet, feel free to substitute raw organic coconut oil. If going this route, you’ll have to add an extra 1/8 teaspoon of Himalayan salt.
Eggs: Eggs are an excellent binder for baked goods. Without them, our buckle wouldn’t have the same fluffy texture! Eggs are also an excellent source of protein.
When purchasing this ingredient, look for pasture-raised, organic varieties. If you live in a rural area, you can usually find a homesteader willing to sell you their eggs.
Coconut Milk: I love adding coconut milk to my baked goods as it gives them a creamy taste without the addition of dairy. This ingredient is full of medium-chain triglycerides that provide your body with an energy boost.
Purchase full-fat coconut milk, as “lite” varieties don’t have coconut cream, where the good stuff lies.
Mint: There’s nothing better than blueberries and mint! You don’t want to skip this ingredient. It adds that extra something to our recipe. I prefer using fresh mint, but you can use dried as well.
Gluten-Free Flour: High-quality gluten-free flour blends create fluffy desserts! I recommend using a cup-for-cup mix for best results.
As consumers learn more about their bodies, these ingredients become easier to find. If you’re having trouble finding them locally, you can always find them online. Some brands may require you to add an ingredient you’re not comfortable with, so be sure to check the label!
Coconut Flour: This healthy flour adds terrific texture to any baked good. You’ll notice I use it a lot. It gives my blueberry buckle recipe some density. Coconut flour is thirsty and tends to soak up liquids, so a little goes a long way!
Sea Salt: Traditional table salt undergoes a rigorous harvesting process that strips it of trace minerals. Your body needs these nutrients to thrive! We recommend using Colima sea salt. It’s hand-harvested, which leaves the good stuff intact. If you don’t have sea salt, you can also use pink Himalayan salt.
Organic Blueberries: This recipe is flexible. You can use fresh or frozen blueberries. I usually use organic frozen varieties with great success. You should note that you may have a longer cooking time, as frozen berries take time to thaw.
Make My Blueberry Buckle Recipe
This recipe is easy to put together and makes the entire house smell amazing. It serves 8, so share with a friend!
You can make this recipe ahead of time and reheat it the day you plan on eating it. You can also freeze your blueberry buckle for up to one month. Be sure to cover it well to prevent freezer burn!
- Unrefined (no propellant) coconut oil or olive oil cooking spray
- ¾ cup organic coconut sugar or Christmas Cookie Blend
- ¼ cup grass-fed butter, softened or raw organic coconut oil plus ⅛ teaspoon freshly ground Himalayan salt or sea salt
- 1 pasture-raised organic egg
- ½ cup full-fat organic coconut milk
- 1 teaspoon dried mint or 1 tablespoon fresh
- 1 ¼ cups all-purpose gluten-free flour
- ¼ cup coconut flour
- 2 teaspoons baking powder
- ½ teaspoon freshly ground pink Himalayan salt or sea salt
- 2 cups organic blueberries, well-drained
- ½ cup organic coconut sugar or Christmas Cookie Blend
- ⅓ cup all-purpose gluten-free flour
- ½ teaspoon organic ground Ceylon cinnamon
- ¼ cup grass-fed butter, softened or raw organic coconut oil
- 9 x 9-inch pan
- Mixing bowls
- Preheat the oven to 375°F. Grease a 9 x 9-inch pan with olive or coconut-oil cooking spray.
- In a medium bowl, mix the butter and coconut sugar until light and fluffy. Add the egg and mix again.
- Stir in the coconut milk and mint.
- In a separate bowl, mix the flours, baking powder, and sea salt. Add to wet ingredients and mix until just combined.
- Gently fold in the blueberries.
- Pour the batter into the pan and spread evenly.
- In a small bowl, make the topping. Mix the coconut sugar, flour, and cinnamon until well combined. Add the butter and cut in with a knife until the mixture resembles coarse crumbs.
- Sprinkle topping onto the batter, and bake for 45-50 minutes or until a knife inserted in the middle comes out clean.
Step One: Cream the Butter and Sweetener
Preheat the oven to 375°F. Grease a 9×9-inch pan with unrefined, no propellant coconut or olive-oil cooking spray.
Mix the butter and coconut sugar in a medium bowl until light and fluffy. Add the egg and combine thoroughly.
Step Two: Add Mint
Stir in the coconut milk and mint.
Step Three: Add Dry Ingredients
Mix the flours, baking powder, and sea salt in a large bowl. Add to the wet ingredients and mix until just combined.
Step Four: Fold in the Blueberries
Gently fold in the blueberries. Pour the batter into the pan and spread evenly.
Step Five: Make the Topping
In a small bowl, combine the coconut sugar, flour, and cinnamon. Add the butter and cut with a knife until the mixture resembles coarse crumbs.
You can also melt the butter and mix it, creating a paste consistency and a darker blueberry buckle.
Step Six: Bake the Blueberry Buckle
Sprinkle the topping on top of the blueberry buckle batter. Bake for 45-50 minutes, or until a knife inserted in the middle comes out clean.
You should note that your cooking time will increase if your berries are frozen. Eat as is or top with my delicious Coconut Whipped Cream. Enjoy!
