Cranberries are best known for their urinary-tract research. Current evidence supports cranberry products for helping reduce the risk of recurrent urinary tract infections in some populations, but they are not a treatment for an active UTI. Cranberry research also suggests potential cardiometabolic benefits, while anticancer findings remain primarily preclinical.

Orange essential oil is used here as a culinary ingredient. Sweet orange oil is recognized in federal food regulations for intended food use, but essential oils are highly concentrated, so use only an oil labeled for culinary use and follow the exact amount in the preserved recipe for the full pie.

Cranberries are popular during the holidays, and for a good reason! My Crustless, Gluten-Free Cranberry Pie will be your new holiday must-have. The name may be misleading, as this treat is more like a gooey cake than a pie. It requires much less prep work than a pie, which is ideal for busy seasons!

I make this pie every year for Friendsgiving, and it's always a hit.

Essential oils add a note of citrus that pairs beautifully with tart cranberries. This dessert is gluten-free and made without added table sugar, but you'd never know! Bonus: You can use your leftover cranberries to create a rustic garland for the tree.

This is exactly the kind of holiday recipe I love. It looks festive, tastes special, and doesn't keep you stuck in the kitchen when you'd rather be spending time with family and friends.

A Match Made in Heaven

Orange and cranberry are a classic combination that creates a fantastic sensory experience. These two components both taste and smell good! In my opinion, cranberries aren't the same without a hint of citrus.

They also bring very different plant chemistry to the recipe.

Whole cranberries provide fiber, vitamin C, anthocyanins, flavonols, and A-type proanthocyanidins. Orange essential oil, on the other hand, is the concentrated volatile oil from the peel. It does not provide a concentrated dose of everything found in a whole orange, such as fiber or vitamin C.

That distinction matters because both ingredients are wonderful, but for different reasons.

Cranberries and Urinary Tract Health

Cranberry has been used for urinary-tract support for decades, and this is one area where the evidence has become much clearer.

A 2023 Cochrane review including 50 studies found moderate-certainty evidence that cranberry products reduced the risk of symptomatic, culture-verified UTIs overall. Benefits were especially evident in women with recurrent UTIs, children, and some people at increased risk after urinary-tract interventions. (1)

The compounds most often discussed are A-type proanthocyanidins, or PACs, which may help interfere with the ability of certain bacteria to adhere to urinary-tract tissues.

That does not mean cranberry pie treats an active UTI.

The research involves specific cranberry products, doses, and populations. If you have symptoms of a urinary infection, use appropriate care rather than relying on dessert as treatment.

Still, I love knowing that this tart little berry has become one of the most studied fruits for urinary-tract support.

Cranberries and Cardiometabolic Health

The original version of this article said cranberry tannins lower cardiovascular-disease risk.

Current evidence is more nuanced.

A 2024 systematic review and meta-analysis of randomized controlled trials found that cranberry consumption modestly improved the total-cholesterol-to-HDL ratio and HOMA-IR, a measure related to insulin resistance. It did not significantly change total cholesterol, LDL cholesterol, HDL cholesterol, triglycerides, fasting glucose, HbA1c, or fasting insulin overall. (2)

So I would not claim that eating cranberries directly lowers your risk of cardiovascular disease.

I would say cranberries are a polyphenol-rich whole food that can fit beautifully into a heart-healthy, plant-rich eating pattern.

What About Cranberries and Cancer?

Cranberries and cranberry-derived compounds have shown anticancer activity in laboratory and animal research, including effects on cell growth, apoptosis, inflammation, and signaling pathways.

A foundational review found preclinical activity across multiple cancer models. (3)

That research is fascinating, but it does not mean cranberries have been proven to kill existing cancer cells in the human body or treat cancer.

This is a perfect example of why evidence level matters.

We can enjoy cranberries as an antioxidant-rich food and remain excited about the preclinical research without turning a holiday dessert into a cancer treatment claim.

Orange Essential Oil for Flavor and a Bright Aroma

Orange is a bright-smelling essential oil that instantly makes a recipe feel festive.

One small human study found that ambient orange odor reduced anxiety and improved mood in dental patients compared with a control condition. (4)

I love diffusing this essential oil, using it in my DIY cleaners, and including it in my favorite recipes!

In this pie, though, its job is culinary.

Sweet orange essential oil is included in federal food regulations among essential oils and natural extractives generally recognized as safe for their intended food use. (6)

Use only an orange essential oil labeled and appropriate for culinary use, and follow the exact amount in the preserved recipe for the complete pie.

This dessert uses simple ingredients to create a flavorful dessert for your holiday gatherings. Here's what you need.

Cooking Spray

Cooking Spray: We prefer to avoid cooking sprays made with the refined oils we don't use in our kitchen.

We recommend an unrefined, no-propellant coconut oil or olive oil cooking spray. Both work beautifully for greasing the pie pan.

Whatever product you choose, read the ingredient list. Some sprays contain propellants, emulsifiers, or blended oils you may not expect from the front label.

Eggs or Egg Replacer

Eggs: In this recipe, you can use eggs or an egg replacer and water.

If you choose eggs, I prefer cage-free organic eggs when available. Farm-fresh eggs can also be a wonderful option when you have a local source you trust.

Both versions work, which makes this recipe easier to adapt when you're hosting people with different dietary needs.

Gluten-Free Flour

Gluten-Free Flour: We choose a high-quality gluten-free blend rather than conventional white wheat flour.

A good 1-to-1 style gluten-free blend creates the soft, cake-like texture that makes this crustless cranberry pie so good.

If you are baking for someone with celiac disease, make sure the flour is specifically labeled gluten-free and protect the recipe from cross-contact with wheat flour in your kitchen.

Sea Salt

Sea Salt: Salt brings all the flavors in a dessert together.

We recommend using Colima sea salt because it is minimally processed and tastes amazing.

You only need the amount called for in the recipe. This is a supporting ingredient, not the star of the show.

Cranberries

Cranberries: Fresh or frozen cranberries bring the tart flavor that defines this dessert.

I like stocking up on fresh cranberries when they're in season and freezing them to use later in the year. They're also a fantastic addition to smoothies.

Frozen cranberries work in this recipe, too. As the original instructions note, they can make the batter extremely thick.

Walnuts

Walnuts: Chopped walnuts add a delicious bit of crunch to this treat.

Walnuts provide polyunsaturated fats, including plant-based alpha-linolenic acid, along with protein, fiber, minerals, and polyphenols. Reviews have highlighted walnut polyphenols as one part of the nut's broader antioxidant and cardiometabolic profile. (5)

You don't need to rank them against every other nut for them to be a wonderful addition to this recipe.

Butter

Butter: In moderation, butter is a beautiful addition to this dessert. It gives the crumb richness and helps create that decadent holiday texture.

I often save heavier desserts like this for special occasions. When choosing butter, I prefer grass-fed varieties.

Liquid Stevia

Liquid Stevia: Liquid stevia is one of my favorite sweeteners.

It blends evenly into batter, and because it is intensely sweet, you only need a small amount.

Read the ingredient list when you shop. Some liquid stevia products contain added flavors, alcohols, glycerin, or other sweeteners, so choose the simplest product that works for your family.

Orange Essential Oil

Orange Essential Oil: There is nothing better than oranges and cranberries.

In this recipe, orange essential oil is being used as a concentrated culinary flavoring.

Use only an essential oil appropriate and labeled for culinary use, follow the exact amount in the recipe for the complete pie, and mix it thoroughly into the batter as directed. Do not add extra drops just because you want more orange flavor. If you want a stronger citrus note, add orange zest instead.

Can I ingest essential oils?

How to Make Crustless Cranberry Pie

This recipe is one of my favorite holiday hacks. It looks like you spent hours in the kitchen when you spent less than an hour in all reality. Easy desserts leave more time for other holiday traditions, like visiting with loved ones!

  • Preheat the oven to 350°F. Mist a 9-inch pie pan with unrefined (non propellant) coconut oil, avocado oil OR olive oil cooking spray.
  • In a medium bowl, beat the eggs. Alternatively, mix the egg replacer with the water in a medium bowl.
  • In a separate bowl, combine the flour and salt. Stir in the cranberries and walnuts and toss to coat.
  • Stir in the melted butter, beaten eggs, almond extract, liquid stevia, and orange essential oil. (If you are using frozen cranberries, the mixture will be very thick.) Spread the batter evenly in the prepared pan. Bake for about 40 minutes, or until a toothpick inserted near the center comes out clean.

Step One: Prepare the Pan

Preheat the oven to 350°F. Mist a 9-inch pie pan with cooking spray. I recommend avoiding unhealthy oils and sticking with coconut or olive oil cooking spray.

Step Two: Beat the Eggs

In a medium bowl, beat the eggs until light and fluffy. Alternatively, mix the egg replacer with the water in a medium bowl.

Step Three: Mix Dry Ingredients

In a separate bowl, combine the flour and sea salt. Stir in the cranberries and walnuts and toss to coat.

Step Four: Add Essential Oils

Stir in the melted butter, beaten eggs, almond extract, liquid stevia, and orange essential oil. Note: If you choose frozen cranberries, your mixture will be extremely thick!

Step Five: Bake and Serve

Spread the batter evenly in the prepared pan. Bake for about 40 minutes or until a toothpick inserted in the center comes out clean. This dessert tastes fantastic when served warm with Mama Z's Vanilla Ice Cream or Coconut Whipped Cream. Enjoy!
