There has long been a group of natural-health practitioners—myself included—who have encouraged families to reduce processed foods and carefully consider the kinds of meat they eat.
In October 2015, the International Agency for Research on Cancer, or IARC, evaluated more than 800 studies investigating the relationship between meat consumption and cancer.
The working group classified:
- Processed meat as Group 1: Carcinogenic to humans
- Red meat as Group 2A: Probably carcinogenic to humans
For processed meat, the strongest evidence involved colorectal cancer. Researchers also observed a possible association with stomach cancer. (1)
What Does “Group 1 Carcinogen” Mean?
This phrase caused tremendous confusion.
A Group 1 classification means there is convincing evidence that an exposure can cause cancer in humans.
It does not mean:
- Every exposure carries the same degree of risk.
- Eating bacon is as hazardous as smoking cigarettes.
- One serving will cause cancer.
- Everyone who eats processed meat will become sick.
IARC groups describe the strength of the evidence that something can cause cancer. They do not rank how dangerous different carcinogens are at typical exposure levels.
Tobacco smoking and processed-meat consumption may both have convincing evidence behind them, but the magnitude of risk from smoking is far greater.
This is important because we do not need exaggeration to make a strong case against habitual processed-meat consumption.
Was the 2015 Announcement Based on One Study?
No.
The classification was based on a large body of epidemiological and mechanistic research reviewed by an international group of experts.
The full scientific evaluation was later published in the IARC Monographs—not left as an unfinished press release.

How Much Does Processed Meat Raise Cancer Risk?
IARC reported that each 50-gram portion of processed meat eaten daily was associated with an approximately 18% increase in the relative risk of colorectal cancer. (1)
Fifty grams is approximately:
- One average hot dog
- A few strips of bacon, depending on size
- Several thin slices of deli meat
- A small serving of sausage
Relative Risk vs. Absolute Risk
An 18% relative increase does not mean that 18 out of every 100 people who eat bacon will develop colorectal cancer.
Suppose a group’s baseline lifetime risk were approximately 5%. An 18% relative increase would raise that theoretical risk to about 5.9%, not 23%.
The exact absolute effect varies according to:
- Age
- Genetics
- Family history
- Body composition
- Alcohol use
- Smoking
- Physical activity
- Fiber intake
- Overall dietary pattern
- Colorectal-cancer screening
The individual increase may sound modest, but processed meat is consumed by millions of people. Even a moderate increase can produce a meaningful public-health burden across a population.
Does Frequency Matter?
Yes.
The evidence concerns habitual intake more than an isolated serving.
Eating processed meat every morning is different from encountering it several times a year. Risk tends to rise as regular consumption rises.
This dose-response pattern is one reason major cancer-prevention organizations advise eating little, if any, processed meat. (2)
Why Is Processed Meat Bad for You?
There probably is not one single mechanism that explains the entire association.
Several factors may work together.
1. N-Nitroso Compounds
Nitrate and nitrite can contribute to the formation of N-nitroso compounds under certain conditions.
Some N-nitroso compounds are carcinogenic.
Formation can occur:
- During meat processing
- During high-temperature cooking
- Inside the digestive tract
The presence of heme iron in red and processed meat may promote reactions that produce potentially damaging compounds.
2. Heme Iron
Heme iron gives red meat its characteristic color and is readily absorbed by the body.
Iron is essential, but high exposure to heme iron in the digestive tract may:
- Promote oxidative stress
- Damage cellular membranes
- Increase lipid oxidation
- Encourage formation of N-nitroso compounds
- Contribute to injury of the colon lining
This does not mean iron itself is bad. It means the form, dose, food matrix, and dietary pattern matter.
3. High-Temperature Cooking Compounds
Grilling, pan-frying, broiling, smoking, or charring meat can produce:

- Polycyclic aromatic hydrocarbons, or PAHs

Smoking can preserve meat and create flavor, but smoke also contains PAHs and other combustion products.
The amount varies according to:

5. High Sodium
Processed meats are often high in sodium because salt helps preserve food and improve flavor.

6. Dietary Displacement
Processed meat often replaces foods that actively support health.
A breakfast centered on bacon and sausage may contain less:

Fiber-rich foods support bowel regularity, nourish beneficial gut microbes, and help dilute and move waste through the digestive tract.
The problem is not simply what processed meat adds. It is also what it pushes off the plate.
7. Overall Lifestyle Pattern
People who eat large amounts of processed meat may also be more likely, on average, to:
- Smoke
- Exercise less
- Drink more alcohol
- Consume fewer plant foods
- Eat more ultra-processed foods
Researchers adjust for these variables, but no observational study can remove every confounding factor perfectly.
That is why scientists consider the total evidence:
- Population studies
- Dose-response relationships
- Experimental mechanisms
- Consistency across populations
- Biological plausibility
Together, these support a causal connection between processed-meat consumption and colorectal cancer.
Nitrates, Nitrites, and “Uncured” Meat
Nitrate and nitrite are among the most misunderstood ingredients in processed meat.
Why Are Nitrites Added?
Nitrite can:
- Slow the growth of Clostridium botulinum
- Help prevent botulism
- Preserve the characteristic pink color
- Slow rancidity
- Contribute to cured flavor
These functions are not trivial. Botulism can be fatal.
The concern is that nitrite can also participate in reactions that form N-nitroso compounds, especially in a meat environment containing heme iron and amines.
Are Nitrates in Vegetables the Same?
Vegetables can naturally contain nitrate, sometimes in amounts higher than cured meat.
But vegetables come packaged with:
- Vitamin C
- Polyphenols
- Fiber
- Potassium
- Other protective plant compounds
These compounds can influence how nitrate is metabolized and may inhibit nitrosation.
This is why nitrate cannot be judged without considering the complete food matrix.
Is “Nitrate-Free” Bacon Really Nitrate-Free?
Not always.
Products labeled “uncured” or “no nitrate or nitrite added” may use:
- Celery powder
- Celery juice
- Other vegetable-derived nitrate sources
Bacteria convert this nitrate into nitrite during curing.
The source may be described as natural, but the finished food can still contain nitrate- and nitrite-derived curing compounds.
Read the fine print. A label may state that no nitrate or nitrite was added except that which occurs naturally in celery powder or another ingredient.
Is Uncured Meat Healthier?
Not necessarily.
A naturally cured product can still be:
- High in sodium
- Smoked
- Made from red meat
- Cooked at high heat
- A source of nitrate-derived nitrite
An “uncured” label does not transform bacon, salami, or sausage into a health food.
What About Added Vitamin C?
Ascorbic acid and related compounds are sometimes added to cured meat because they can:

Ascorbic acid itself is vitamin C and should not be portrayed as a dangerous additive merely because its chemical name appears on a label.
This is a helpful reminder: we should evaluate ingredients according to evidence, dose, and function—not simply whether a name sounds unfamiliar.
Are Calories and Fat the Main Problem?
No.
Processed meat may be high in calories and saturated fat, but those are not the only concerns and may not be the primary reason for its cancer classification.
A low-fat hot dog can still be:

- Made with nitrate or nitrite
- Consumed as part of a low-fiber meal
Likewise, a product marketed as:
- Lean
- High protein
- Keto-friendly
- Low carbohydrate
- Gluten-free
can still be processed meat.
Low-Carb Does Not Automatically Mean Healthy
A low-carbohydrate diet built around bacon, sausage, salami, and processed deli meat is very different from one built around:
- Vegetables
- Olives
- Avocado
- Nuts

- Clean, minimally processed protein
- Healthy fats
Carbohydrate restriction should never become an excuse to crowd cancer-associated foods onto the plate.
Protein Is Available Elsewhere
There is no unique nutrient in processed meat that cannot be obtained from other foods.

How Much Red Meat Is Recommended?
The World Cancer Research Fund recommends:

For people who eat red meat, it recommends limiting intake to approximately three portions per week, totaling about 350–500 grams cooked weight. (2)
Better Ways to Prepare Fresh Meat
When choosing meat:
- Select minimally processed cuts.
- Avoid charring.
- Use lower-temperature cooking when practical.
- Remove blackened portions.
- Marinate meat with herbs, spices, citrus, or vinegar.
- Serve small portions beside abundant vegetables.
- Avoid making meat the center of every meal.
Herbs such as rosemary, thyme, garlic, oregano, and sage contain antioxidants that may reduce formation of some high-temperature cooking compounds.
What About Pork and Shellfish?
The original discussion combined processed meat, pork, and shellfish. These are related in a biblical dietary conversation, but they are not identical scientific categories.
Pork Is Red Meat
Despite older marketing that called pork “the other white meat,” pork is classified as red meat because of its myoglobin content and livestock origin.
Fresh pork and processed pork should be distinguished:
- A fresh pork chop is red meat.
- Bacon, ham, pork sausage, salami, and pepperoni are processed meat.
Processed pork therefore carries the concerns associated with both red meat and processing.
Does Pork Uniquely Store Toxins?
There is no sound evidence that pigs are incapable of eliminating toxins simply because they have a single stomach or eat a varied diet.
Animals, including pigs, use the liver, kidneys, digestive tract, lungs, and other systems to metabolize and eliminate waste.
The strongest evidence-based reasons to limit or avoid pork are:
- Biblical conviction
- Its classification as red meat
- Its frequent use in processed products
- Potential foodborne pathogens when mishandled or undercooked
- Animal-welfare or farming concerns
We do not need inaccurate physiology to support a biblical choice.
Foodborne Illness and Pork
Raw or undercooked pork can carry pathogens such as:
- Yersinia enterocolitica
- Salmonella
- Trichinella
- Hepatitis E virus in some regions
Proper farming, inspection, refrigeration, handling, and cooking substantially reduce these risks.
Foodborne pathogens are not unique to pork. Poultry, beef, eggs, produce, and seafood can also transmit illness when contaminated or mishandled.
Shellfish Is Not Processed Meat
Shrimp, crab, lobster, oysters, clams, mussels, and scallops are not part of the processed-meat cancer classification simply because they are shellfish.
Shellfish concerns may include:
- Biblical dietary restrictions
- Food allergies

- Biotoxins
- Contaminated growing waters
- Antibiotic or farming practices in some supply chains

These are legitimate topics, but they should not be presented as though IARC’s processed-meat findings prove that shellfish causes colorectal cancer.
Are Shrimp “Bottom Feeders”?
Many shrimp species feed on algae, plankton, detritus, and small organisms near the bottom of aquatic environments.
This ecological role does not by itself prove that shrimp flesh accumulates dangerous “toxins.”
Food safety depends more on:
- Water quality
- Harvesting practices
- Aquaculture conditions
- Cold-chain control
- Contamination testing
- Proper cooking
We can maintain a biblical conviction against shellfish without making scientific claims that the evidence does not support.
A Biblical Perspective on Processed Meat
Cautions involving certain animals have been passed down through the centuries.
Deuteronomy describes animals that Israel was to regard as clean or unclean:
“The pig is also unclean; although it has a divided hoof, it does not chew the cud. You are not to eat their meat or touch their carcasses. Of all the creatures living in the water, you may eat any that has fins and scales. But anything that does not have fins and scales you may not eat; for you it is unclean.” — Deuteronomy 14:8–10
Jewish communities continue to observe kosher dietary law, and Muslims abstain from pork under Islamic teaching.
Christians differ over whether Old Testament food laws remain binding under the New Covenant.
Why Many Christians Eat Pork
Christians who believe these dietary restrictions are no longer binding often point to:

They understand these passages to mean that ceremonial food distinctions no longer determine a believer’s standing before God.
Why Some Christians Still Abstain
Other Christians distinguish between:

They may avoid pork and shellfish without claiming that food choices earn salvation.
For these believers, the Old Testament instructions remain a meaningful pattern of stewardship.
Do Biblical Dietary Laws Predict Modern Science?
The biblical text does not explain these commands through modern microbiology, toxicology, or cancer research.
It is reasonable for believers to see wisdom in God’s instructions. It is not wise to invent scientific mechanisms and then present them as proven reasons behind the text.
Reality check: our faith does not need exaggerated science to make Scripture trustworthy.
Liberty Requires Love
Romans 14 teaches believers not to despise or condemn one another over disputed food matters.
One believer may abstain from pork as an act of conscience. Another may eat it without believing that the Mosaic restriction remains binding.
Both should ask:
- Am I honoring God?
- Am I caring for my body?
- Am I acting from faith rather than fear?
- Am I judging another believer unfairly?
- Am I ignoring clear health evidence because I dislike restriction?
Christian liberty is not a command to eat everything available. It is freedom to make wise, prayerful choices without trying to earn righteousness through food.
Processed Meat and Stewardship
Whatever your theology concerning pork or shellfish, the evidence concerning processed meat should give us pause.
First Corinthians 6:12 offers a valuable principle:
“‘All things are lawful for me,’ but not all things are helpful.”
A food may be culturally normal and legally available without being beneficial as a daily staple.
Stewardship means considering:
- How often we eat it
- How it was produced
- What evidence says about long-term risk
- What healthier foods it replaces
- What habits we are teaching our children
Why “Everything in Moderation” Can Mislead Us
“All things in moderation” sounds balanced, but it is not a direct quotation from Scripture.
It can also become a convenient way to avoid making hard changes.
Not Everything Belongs in a Healthy Routine
We do not need:
- Tobacco in moderation
- Lead in moderation
- Trans fat in moderation
- Chronic sleep deprivation in moderation
The fact that an exposure is common does not make regular use wise.
Moderation Must Be Defined
For one person, “moderation” means bacon twice a year.
For another, it means:
