Gluten-Free Apple Crisp

  • 8 x 8-inch glass baking dish

  • Preheat the oven to 375°F. Lightly grease a square 8×8 pan with unrefined (non propellant) coconut oil, avocado oil OR olive oil cooking spray. Place the sliced apples in the baking dish, distributing them evenly.
  • In a medium mixing bowl, combine the Christmas Cookie Blend, flour, oats, cinnamon, nutmeg, and pumpkin pie spice (if using). Cut in the butter until the mixture resembles pea-sized crumbs.
  • Sprinkle the crumb mixture over the apples and top with more pumpkin pie spice powder if desired.
  • Bake for 30 minutes or until the apples are tender and the topping is golden brown. Serve with Coconut Milk Whipped Cream or Coconut Milk Vanilla Ice Cream

Notes

*We prefer using a combination of different types of apples, as that gives the apple crisp a well-rounded flavor.
Dessert Bar Variation: You can also double the topping to create a dessert bar. Press half of the topping into the bottom, add the apple mixture, and top with the rest of the topping.
