In a medium mixing bowl, combine the Christmas Cookie Blend, flour, oats, cinnamon, nutmeg, and pumpkin pie spice (if using). Cut in the butter until the mixture resembles pea-sized crumbs.
Sprinkle the crumb mixture over the apples and top with more pumpkin pie spice powder if desired.
Bake for 30 minutes or until the apples are tender and the topping is golden brown. Serve with Coconut Milk Whipped Cream or Coconut Milk Vanilla Ice Cream

*We prefer using a combination of different types of apples, as that gives the apple crisp a well-rounded flavor.Dessert Bar Variation:You can also double the topping to create a dessert bar. Press half of the topping into the bottom, add the apple mixture, and top with the rest of the topping.
