Protein Power Bites
  • ½ cup rolled uncooked oats
  • 2 Tablespoons flax meal
  • 2 Tablespoons shredded coconut
  • 2 Tablespoons all natural unsweetened creamy nut butter*
  • 10 dried apricots, chopped
  • 5 dried dates, chopped
  • 2-3 T water
  • handful of chopped dried cranberries
  1. In a small sauce pan simmer chopped dried apricots in water, stirring frequently and adding more water till fruit is mushy.
  2. Using a blender or food processor, puree the fruit.
  3. Stir in uncooked oats, flax meal, coconut and nut butter.
  4. Add chopped dried cranberries.
  5. Roll into bite sized balls and refrigerate.
*Use a healthy nut butter of your choice: almond, cashew, or sunflower butter
We keep our protein bites in the refrigerator because they seem sweeter when they're cold. They're also less sticky that way.
I use organic, very finely shredded coconut for these. It's almost powdered. If you use a larger texture you may need to use less oats so that everything will still stick together.
