  1. Preheat the oven to 350°F. Grease and flour an 8 x 4-inch loaf pan.
  2. In a large bowl, combine both flours, coconut sugar, baking powder, salt, and baking soda.
  3. Cut in butter until the mixture resembles coarse crumbs.
  4. In a small bowl, whisk the egg, orange juice, and zest; stir into dry ingredients until just moistened. Do not overmix.
  5. Fold in cranberries and walnuts.
  6. Spoon batter into the loaf pan and spread evenly.
  7. Bake for 65-70 minutes or until a toothpick inserted near the center comes out clean. Cool in the pan 10 minutes before removing to a wire rack to cool completely.
