Oven-Roasted Herbed Potatoes Side Dish
  • 1.5 lbs red or yellow skinned potatoes, washed
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon fresh rosemary
  • 1 tablespoon fresh thyme
  • Pink Himalayan Salt to taste
  1. Preheat oven to 425 degrees.
  2. Cut potatoes into evenly sized wedges or cubes about 1”
  3. Toss potatoes, olive oil, herbs, and salt in a bowl
  4. Place on a baking sheet lined with parchment paper
  5. Bake for 30-35 minutes until browned and tender
