Watermelon and Blueberry Salad

  • 5 cups fresh watermelon, cut into small cubes
  • 1 pint blueberries
  • Juice of ½ of a lemon
  • 1 drop of lemon essential oil
  • ½ cup vegan feta alternative or use shredded Daiya mozzerella
  • 2 T fresh mint, finely chopped or torn into small pieces
  • Himalayan Sea Salt
  • Raw Manuka Honey
  1. In a large bowl, combine watermelon cubes and blueberries, then squeeze lemon juice overtop.
  2. Sprinkle cheese into bowl (if desired).
  3. Mix in fresh mint pieces.
  4. Drizzle a bit of honey and sprinkle on a pinch of sea sat.
  5. Toss thoroughly to combine.
  6. Serve as it is or top with your favorite vegan whipped cream!
